Mexican Style Sweet Potato

Welcome! In the world of blogging I was never really good at it, not good at keeping up and being interesting...But I'm here again giving it another shot, hopefully someone out there would care to follow along. I made this super easy Mexican style sweet potato, its not at all my recipe, the original recipe can be found here. Its so delicious and easy and if you like sweet potato you'll love this recipe! I made it for my family and they loved it, even my brother and he is a very picky eater. I hope you enjoy it. Just a reminder you can always add and teak recipe to your liking.

  •  2 Sweet Potato's
  • 1 Tablespoon extra virgin olive oil
  • 1/2 white onion, diced
  • 1/2 Red pepper, diced
  • 1/2 Teaspoon Sea Salt
  • 1 can (13 ounces) of black beans, rinsed and drained
  • 1 Lime, Juiced
  • Parsley, Chopped
  • Scallions, Chopped (Optional)
  • Vegan Cheese (Optional)


1.Preheat oven to 400 degrees. Bake sweet potatoes for one hour.
2.Remove from the oven and slice lengthwise. Scoop out flesh so there is only a thin layer remaining lining the edges. Set aside.
3.Heat olive oil in a frying pan over medium heat. Add all vegetables and garlic, and cook until tender, about 7 minutes. Season with salt to taste.
4.Add black beans and lime juice. Mash mixture with the edge of a fork to break up beans.
5.Add sweet potato flesh and mix until thoroughly combined.'Stuff each potato skin with bean mixture and serve with a drizzle of extra-virgin olive oil, chopped parsley, chopped scallions, and cheese.
